Wahaca has launched its summer menu, and it reads like a postcard from somewhere sunnier than a Soho street. The beloved Mexican restaurant chain – which has been feeding the UK since 2007 and holds the title of the country’s most sustainable restaurant group – has unveiled a run of new dishes and drinks that pair perfectly with the long, lazy, al fresco eating the season demands.

So, what’s new?

Leading the food line-up is a yellowfin tuna tostada (£10.50), made with sustainably-sourced raw tuna marinated in soy and lime, layered onto crisp tortillas with avocado, tomato salsa and salsa macha. Vegetarians are, as usual, very well catered for in Wahaca. This summer, they can enjoy a chipotle glazed aubergine (£7.75) – a smoky roasted aubergine with a punchy macadamia mole, jalapeño oil and crumbled feta.

Returning to the specials menu with a glow-up are crispy potato esquites (£7.95) – roasted Jersey Royals with corn, jalapeño mayo, crema and Parmesan-style cheese – alongside Hibiscus Glazed Chicken Wings (£9.25), finished with pickled vegetables, crispy onions and toasted sesame.

The sunshine bowls (from £13.95), now refreshed for summer, pack in 30 plants alongside avocado, quinoa, cherry tomatoes and agave chipotle dressing, with the choice of grilled chicken, halloumi al pastor or garlic sweet potato.

And what’s to drink?

On the drinks side, Wahaca has given the Margarita a break and introduced five Spritz specials to match the vibrancy and freshness of the summer months:

  • The Wahaca Spritz (£10.95) combines Aperol, agave tequila, grapefruit and Prosecco;
  • The Frida Spritz (£10.95) takes white rum, pink grapefruit, lemon, vanilla and Prosecco as its inspiration from Frida Kahlo’s palette of maximalist colour.
  • The Jalapeño & Cucumber Spritz (£9.95) brings a lightly spiced edge with muddled jalapeño, gin, cucumber, elderflower and Prosecco.
  • The Sarti Spritz (£9.95) goes tropical with blood orange, mango and passion fruit.
  • Non-drinkers aren’t left to cheers with the awkward can of diet coke – the Three Citrus Spritz (£5.95) looks the part with pink grapefruit, lime, lemon and mint.
