
Today, London’s skyline welcomes a new culinary player with no intention of blending in. Shanghai Me, the long-anticipated Pan-Asian dining concept, officially opens its doors atop the 28th floor of the London Hilton on Park Lane.
Positioned above Mayfair in every sense, the restaurant and its adjoining cocktail outpost, Bund Lounge, promise a high-altitude, high-glamour escape into the golden age of 1930s Shanghai.
It arrives with bold architecture, a sweeping view over Hyde Park and beyond, and the kind of layered, transportive interiors that feel more cinematic than thematic. Designed by award-winning studio First Within, the space is an intentional contrast to London’s minimalist dining rooms. Think: deep mahogany tones, Art Deco geometry, and the sort of ambient lighting that flatters even the most jet-lagged dinner guest.
Menu highlights
The menu leans into refined and elevated Pan-Asian classics. Expect dim sum, Peking duck, and hand-rolled sushi, alongside signature dishes that span the flavour-rich Chinese, Japanese, and Vietnamese cuisines.
Highlights include yellowtail carpaccio with black truffle, spicy bluefin tuna oshizushi, and Cantonese-style roast duck topped with foie gras and caviar — a dish that’s already a talking point in the brand’s Dubai and Doha outposts. Braised beef short rib Shanghai-style and Mongolian lamb chops also feature among the early standouts.
Dim sum, a cornerstone of the concept, is set to arrive in full force with a dedicated “library” — an approach already popular at Shanghai Me Dubai. Expect intricately crafted small bites like crystal vegetable bao dumplings and chicken truffle soy rolls.

Drinks and desserts
The drinks menu at Bund, meanwhile, is built around exotic botanicals and rare spirits – a tasting experience in its own right. Cocktails take inspiration from the Chinese zodiac. They are served in a lounge described as having the “aesthetic of an Orient Express dream sequence”. It’s designed as more than just a pre-dinner holding space, with snacks like yellowtail carpaccio and foie gras duck rolls available late into the night.
Then there’s the desserts platter. Designed for indulgence and spectacle, Shanghai Me’s desserts are a East-meets-West theatrical spread. You can count on tropical fruits, matcha domes, soft-serve, flan, and chocolate-coated mousse.

The atmosphere
Shanghai Me doesn’t seem to be just another luxurious restaurant planted in Mayfair, but more a statement of cultural reverence. The brand’s roots trace back to Dubai, where its original location is now a standard-bearer for elegant, immersive hospitality.
In its London iteration, the experience has been redefined but not diluted. It’s mood-driven, musically tuned (resident DJs take over Bund into the early hours), and unapologetically decadent.
Inside, seating accommodates up to 120 guests, including two private dining spaces. The new opening takes over the site formerly occupied by Galvin at Windows, a Michelin-starred restaurant. Not only did it operate for 18 years, it was widely considered one of London’s best rooftop dining destinations.
With that legacy in mind, Shanghai Me has big shoes to fill. However, it arrives with international pedigree and a concept that already feels distinct.

Behind Shanghai Me London is Fundamental Hospitality, a UAE-born company established in 2011. Its Chairman and Founder, Evgeny Kuzin ,calls the opening a natural evolution. “We are thrilled to officially open Shanghai Me and Bund at London Hilton on Park Lane. It’s the perfect location to base our restaurant and share our interpretation of Pan-Asian dining and luxury hospitality, and we can’t wait to greet guests this summer.”
